Like most things Indian, chaat has ancient origins with references to some of our modern-day dishes appearing in Sanskrit writings as far back as 500 BC. More recently (only about 400 years ago), the chaat took form in northern India when the land was ruled by Mughal Emperor Shah Jahan (builder of the Taj Mahal), in what is now known as Uttar Pradesh. Travelers from other lands picked up on it as they journeyed through the continent and added their own influences. Now, in a country that is filled with countless foods, traditions, religions and languages, chaats are a unifying culinary experience.
